Cucumber Salads Are Viral On TikTok

Cucumber salads are all the rage lately, especially thanks to Logan Moffitt, aka the “cucumber guy” on TikTok. While I’m still trying to understand why his cucumber salad video blew up (seriously, it’s just cucumbers, right?), I’m all for it if it means more people are getting inspired to eat healthfully! Check out this article on why cucumbers are so healthy: Not just water! All the amazing health benefits of cucumbers. Cucumber recipes are trending big time, and I couldn’t resist joining the fun with my own spicy Asian cucumber salad twist with mango!

With years of experience in creating healthy, plant-based meals, I’ve learned that cucumbers are a versatile, nutrient-packed ingredient that’s easy to incorporate into a variety of dishes. This Spicy Mango Cucumber Salad is a great example of how you can combine fresh, hydrating ingredients for a flavorful and nutritious meal.

Why Cucumber Recipes Are Trending

Thanks to TikTok and Logan Moffitt’s viral spicy Asian cucumber salad, cucumber recipes have been trending like wild. Logan’s video took off for a few key reasons: his unique cucumber cutting technique, where he makes thin, uniform slices that maximize the crunch and absorb the flavors of the dressing, and his simple yet flavorful approach to seasoning the cucumbers with bold Asian-inspired flavors. The rhythmic sound of slicing cucumbers, paired with the visual appeal of perfectly cut pieces, has captivated viewers who enjoy the ASMR-like experience, making it both satisfying and relaxing to watch.

While I’m still scratching my head at why that particular video gained so much traction, I’m thrilled that more people are getting into eating cucumbers—they’re incredibly hydrating and packed with nutrients like vitamin K and antioxidants! Plus, they’re so versatile in recipes. If you haven’t tried making a cucumber salad yet, this spicy cucumber salad recipe with mango is a great place to start for an exciting twist on the trend.

Cucumber Health Benefits

According to this study on the Mediterranean diet, cucumbers offer various health benefits due to their rich bioactive compounds. They contain high levels of water, making them an excellent food for hydration. Cucumbers also have strong antioxidant, anti-inflammatory, and lipid-lowering properties. These attributes contribute to improved cardiovascular and nervous system health, as well as reduced hypertension and skin issues. Moreover, cucumbers contain phytochemicals such as cucurbitacins and flavonoids, which offer protective benefits, including potential anti-cancer properties and digestive support.

Asian Cucumber Salad Variations

For a variation, you could make this recipe into an Asian cucumber salad not spicy by omitting the chili flakes and sriracha. Or, try adding peanut butter to the dressing for a richer, heartier flavor, similar to a spicy Asian cucumber salad with peanut butter. The possibilities are endless, and this trending ingredient is a great canvas for all kinds of creative combinations!

Why Mango In Our Sweet & Spicy Cucumber Salad?

As someone who regularly experiments with different cucumber salads, I’ve found that adding mango creates a refreshing sweetness that perfectly complements the spicy dressing. My years of experience working with plant-based ingredients have taught me how to balance flavors in a way that brings out the best in simple, fresh produce.

How I Like To Cut My Cucumbers

While a mandoline slicer would definitely speed things up (just be careful with your fingers!), I’ve grown to love peeling vertical strips along my cucumbers. It gives them a stylish, fancy look while keeping some of the fiber from the skin without the tough texture of leaving it all on. Try combining both methods for quickly cut, beautifully striped cucumbers!

I always use locally sourced, organic cucumbers to ensure the freshest, most nutritious ingredients in my dishes. By choosing high-quality produce, I can create meals that not only taste great but also offer maximum health benefits.

Time needed: 5 minutes

Peel Stripes and Dice Cucumbers

  1. Start with a clean cucumber

Wash your cucumber thoroughly to remove any dirt or wax from the skin.

  2. Peel stripes

Using a vegetable peeler, remove strips of skin in alternating sections vertically around the cucumber.

  3. Cut off ends from cucumber

  4. Dice the cucumber

Dice the cucumber thinly in about 1/4 inch pieces with a chef’s knife. Alternatively, you can use a mandoline slicer!
