This Korean spiced, roasted gochujang cauliflower with avocado, corn, cilantro, and a sweet & spicy tomato and onion relish will be loved by the whole family! This recipe has you bake the cauliflower, but I bet you could also make them crispy by tossing them in some whole wheat breadcrumbs and cooking them in the airfryer. Cauliflower is a more nutritious and cheaper option as opposed to beef.

Pushed near the top because it’s almost Easter! Cutting food into fun shapes is a great way to get kids to want to try something new. These vegan bunny shaped savory biscuits are super cute while high in nutrition and low in fat. You can use yams or sweet potatoes for this recipe. Both are high in fiber, Vitamin-B6, and Magnesium. Yams are highest in Vitamin C while sweet potatoes are highest in Vitamin A. I imagine a version of these bunnies with yam would be more savory, and a sweet potato version more sweet.

One of my own recipes inspired by the kids bugging me to get the gross instant store bought version. This is a delicious and kid friendly whole grain, Vegan / plant-based spicy ramen noodles recipe with mushrooms, bokchoy, bellpepper, and more! It is high fiber, gluten-free, healthy and delicious! Hold the Sriracha if your children are sensitive to spicy foods. Experiment with different types of vegetables in the noodles to see what your kids will eat. If the vegetables I put in this recipe are too adventurous, first try a bag of frozen peas or mixed vegetables.

This Galaxy acai bowl is made with cherries, bananas, apples, acai, and other superfoods. Considered a superfood – acai is high in antioxidants and other nutrients. No need for added sweeteners – blended banana makes smoothies naturally sweet.

Blending fruit and pouring into popsicle molds always makes it easy to get kids to eat more fruit! Skip the popsicles at the store that are more often than not loaded with added sugar and artificial ingredients, and make them naturally flavored and sweetened. These Watermelon Strawberry Popsicles are healthy, easy to make and absolutely delicious. Watermelon isn’t in season just yet, but it’s on the horizon. Watermelon is high in Vitamin A and C as well as electrolytes. These would be great for my running friends post-run too! This is a refreshing treat that tastes like summer!

It’s a great gluten-free, high protein flour alternative I have enjoyed using to make a quiche crust as well as these chickpea dumplings. Butternut squash is high in Vitamin A, Vitamin C, Vitamin B-6, and Magnesium.

These delicious Thai and Vietnamese inspired edamame banh mi sliders are so cute and tasty, you shouldn’t have any problem getting your kids to eat them. Edamame is a favorite to our kids. They usually devour steamed edamame with some sea salt when served as an appetizer. Edamame is high in protein, fiber, potassium, and magnesium. The “pickled” vegetables give these a really delicious tang, complementing the edamame patties well. If your kids can take the heat, I like these with sriracha.

Quick and easy Red Lentil Curry, also known as Masoor Dal, can be made in the instant pot or stovetop. This super delicious, healthy and budget friendly vegan meal can be made in less than 30 minutes! Lentils are a pretty versatile bean. I’ve made lentil meatloaf and lentil veggie burgers with them as well. Lentils are high in protein, fiber, magnesium, iron, and Vitamin B-6.

This Seitan cooked with sizzling peppers and onions is a quick and tasty meatless meal. Seitan is really just condensed wheat gluten, so those with sensitivities should steer clear of this meat alternative. For those who are not though, seitan is quite tasty when seasoned. Seitan is high in protein and fiber.

I often blend nutritional yeast and cashews to make a creamy sauce for all kinds of recipes. If you aren’t preparing a full plant-based meal, you can add parmesan as well!

These Energy Balls with dates and raspberries are not only delicious but also filling and a great snack to-go. They look so fun and delicious, I’m pretty sure you will have to fend the kids away from eating all of them! These are sweetened only with dates, which are amazing if you haven’t tried them! Dates are high in fiber and super sweet. I also have dates in my Date Energy Bars Recipe. If you can afford them, I suggest buying Medjool Dates to Deglet Noor Dates, as they have a richer caramel-like taste.

Gazpacho is a nice twist on making just a basic tomato soup. It is like a liquid summer salad in a bowl – refreshing, nutritious, and delicious! If your kids aren’t adventurous you can downgrade to a basic tomato soup, our four kids made an excellent tomato soup last week! Gazpacho to me is far less boring, and will surely please the whole family. With assistance with the food processor, your kids can help make this recipe too.

This is a healthy, fulfilling salad with 5 super ingredients: quinoa, tomatoes, chickpeas, avocado and cranberries; and a lemony lemon-olive oil dressing. This salad is great for our slightly less picky eaters. Regardless, I suggest making it and nonchalantly presenting it to your kids. It is good to expose your kids to as many plant foods as you can. Not-so-worst case, you have a whole lot of this yummy salad to yourself! I imagine this salad would do just fine storing in the refrigerator for a couple days.

These are easy, no bake plant-based cereal bars with dried cherries, dark chocolate, cashews, coconut, and whole grain cereal your family will want to eat up. I made these malleable so you can cut it into shapes. I made these for the kids Valentine’s Day this year! They are also an excellent energy bar for my running and cycling.
