Red Pepper Coulis
This simple yet delicious red pepper coulis enhances the flavor of an array of different dishes. Use to enhance hummus, falafel, soup, pizza, and more!
Preheat oven to 350F. Line a pan with parchment paper or spray with a little oil.
Cut red peppers in half, remove their stems, and remove seeds.
Place peppers cut side down in oven for 30-40 minutes, or until soft and nicely charred.
Remove peppers from oven and place in a food processor.
Add the red wine vinegar, salt, ground red pepper, and quartered shallot into the processor.
Process until smooth.
