Spray a pan lightly with olive oil and heat over medium-low.
When the pan is hot, crack and add eggs to the pan.
Meanwhile, toast the bread.
Lather the toasted bread with beet hummus. No need to be shy here.
When eggs are easy to flip, flip them over and cook the other side. ~15 seconds for over-easy or continue cooking until your yolk is cooked as desired.
