  • Soak or boil cashews until soft if you don’t have a high-speed blender.
    ¾ cup raw cashews
  • Add cashews, miso, lemon juice, Dijon, capers, garlic, nutritional yeast, maple syrup, and ¼ cup water to a blender.
    2 tbsp nutritional yeast, 2 tbsp lemon juice, 1 tsp maple syrup, 1 tbsp capers, 1 clove garlic
  • Blend until smooth and creamy, adding more water until it reaches your desired thickness.
  • Taste and adjust: more lemon for tang, miso for umami, or capers for briny flavor.
    1 tbsp capers
  • Store in a sealed jar in the fridge up to 5 days. Stir before using.
