It makes this a super fresh, family-friendly fattoush salad with za’atar that fits right into your weeknight routine and your whole food plant based diet (with oil-free option).

Fattoush Salad Recipe (with Vegan Za’atar Dressing!)
Equipment
- Food Processor Recipes or blender
Ingredients
For the Salad:
- 1 large head romaine lettuce chopped
- 1 cup cherry tomatoes halved
- 1 English cucumber diced
- 1 red bell pepper chopped
- ½ red onion thinly sliced
- 2 small whole wheat pita breads torn into bite-sized pieces or cut into triangles and toasted
Optional Add-ins:
- Sliced radish I used watermelon radish
- Green onion
- Arugula or mixed greens
For the Dressing (Za’atar + Herb-Infused):
- ¼ cup fresh lemon juice from the fruit tastes best
- 1 tbsp white wine vinegar
- 3 tbsp extra virgin olive oil optional; omit for oil-free
- 1 tbsp tahini optional for creaminess
- 1 tsp maple syrup
- 1½ tsp za’atar seasoning contains sumac
- 2 tbsp fresh parsley blended into dressing
- 2 tbsp fresh mint blended into dressing
- Salt and black pepper to taste
- ~2 tsp water or aquafaba to thin if needed
Instructions
Toast the Pita
- Preheat oven to 375°F. Spread torn pita on a baking sheet.
- Brush a bit of olive oil and lightly season with za’atar on the pita.3 tbsp extra virgin olive oil
- Bake for 8–10 minutes, until crispy and golden. Cool completely.
Prep the Salad
- Chop romaine, tomatoes, cucumber, bell pepper, and onion.1 red bell pepper
- Combine in a large bowl with any optional add-ins.
Make the Dressing
- In a blender or food processor, combine lemon juice, vinegar, olive oil (if using), tahini (if using), maple syrup, za’atar, parsley, mint, salt, and pepper.3 tbsp extra virgin olive oil, ¼ cup fresh lemon juice, 1 tsp maple syrup, 1 tbsp tahini
- Blend until smooth. Add water or aquafaba if needed to thin to your liking.~2 tsp water or aquafaba
Toss and Serve
- Drizzle dressing over the salad and toss well.
- Add the toasted pita chips just before serving to keep them crisp.
