Ingredients
Main Meat (choose one)
- 1 ½ cups dry TVP granules OR 1 ½ cups cooked brown black, or green lentils
- 1 cup vegetable broth very hot to rehydrate TVP; skip if using cooked lentils
- 3 tbsp taco seasoning plus more for dusting
- 1 tbsp avocado oil or splash of broth
Base
- 1 tortilla chips Ideally multigrain and/or baked, ~10 servings
- 1 –1 ½ cups vegan nacho cheese see Vegan Nacho Cheese recipe
Optional Toppings
- 1 15oz can black beans or pinto beans; low sodium, drained well
- 1 cup bell peppers diced
- 1 cup corn fresh or frozen, thawed
- ⅓ cup diced red onion or sliced green onion
- 2 jalapeños fresh or pickled, sliced
- 1 avocado diced
- 1 tomato or ½ cup pico de gallo or salsa
- ¼ cup cilantro chopped
- lime wedges for serving
- Hot sauce optional
Instructions
- If using TVP: Place granules in a bowl. Pour 1 cup hot vegetable broth over it. Let sit 5 minutes. Add more liquid if still dry, but keep texture crumbly.1 cup vegetable broth
- Heat a skillet with olive oil or splash of broth. Add TVP or lentils, taco seasoning, salt, and pepper. Cook 5–7 minutes until browned and flavorful. Set aside.3 tbsp taco seasoning
- Preheat oven to 375°F (190°C) convection. Line a sheet pan with parchment.
- Spread tortilla chips in an even layer. Drizzle lightly with vegan nacho cheese.1 –1 ½ cups vegan nacho cheese, 1 tortilla chips
- Add your main “meat “and any sturdy toppings (like beans, peppers, or corn). Drizzle with more cheese if desired.1 cup corn
- Bake 5–7 minutes, until cheese is melty and toppings are warmed. Keep a close eye so chips don’t overbrown.1 –1 ½ cups vegan nacho cheese, 1 tortilla chips
- Remove from oven. Add fresh toppings (avocado, jalapeños, pico de gallo, cilantro). Finish with lime juice and hot sauce if you like it spicy.2 jalapeños, Hot sauce, ¼ cup cilantro, 1 avocado
- Serve immediately, family-style, straight from the sheet pan.
