They’re creamy and crunchy at the same time and taste like a cross between a chicken Caesar wrap and a chickpea salad sandwich — but entirely plant‑based. Chickpeas (mashed or whole) replace chicken, crisp greens add crunch, and a drizzle of my cashew‑miso vegan Caesar dressing ties it all together. It’s the kind of lunch I can prep in minutes and still feel like I’m eating something special.

These wraps are also a great way to use up leftover dressing; I love prepping a batch of wraps on Sunday and having grab‑and‑go lunches ready for the week. Simply spoon a generous helping of chickpeas and dressing into a whole‑grain tortilla, add chopped romaine or spinach, roll it up and enjoy. They’re kid‑friendly too—my little ones happily munch them on the way to after‑school activities.

Not all wraps are created equal — some are basically just a big napkin made of white flour and preservatives. Here’s how to find a better option:
🚫 Skip these:
- Refined flours (a.k.a. “enriched wheat flour”) — little fiber, fast sugar crash.
- Ultraprocessed oils (hydrogenated or partially hydrogenated) — sneaky trans fats.
- Added sugars — you don’t need dessert hiding in your lunch.
- Long lists of preservatives & gums — if it sounds like a chemistry set, leave it.
- High sodium — some tortillas pack more salt than a bag of chips.
✅ Look for:
- 100% whole grain or sprouted grain wraps for fiber + protein.
- Short ingredient lists — flour, water, salt, maybe olive oil.
- Gluten-free? Cassava, brown rice, or almond flour wraps can be good alternatives (without fillers).
- Local or homemade wraps often taste fresher and skip the junk.
👉 Where to find them: Cleaner wraps are tough to track down in a typical grocery store. Check your health food store or peek in the gluten-free freezer section — that’s often where the short-ingredient, whole-food wraps are hiding. If you’re stuck at a conventional store, grab the option with the fewest ingredients possible.

Chickpea Caesar Wraps
Ingredients
- 1 15-ounce can chickpeas drained and rinsed (whole or lightly mashed, your call)
- 7 cups romaine lettuce chopped, or baby spinach
- ⅓ cup my vegan Caesar dressing recipe
- 4 large whole wheat wraps see section above on what to avoid
Instructions
- In a bowl, toss chickpeas with Caesar dressing until evenly coated.1 15-ounce can chickpeas
- Lay out a tortilla and add a generous handful of romaine.
- Spoon on chickpeas and dressing mixture.1 15-ounce can chickpeas
- Roll up tightly, tucking in the sides as you go.
- Slice in half and serve immediately, or wrap and refrigerate for up to 24 hours.
