Let’s start our Easter dinner right with some mouthwatering appetizers! All ready in less than 30 minutes, healthy, and made with easily available ingredients. 🙌
1. Baked Kale Chips 🥬
Looking for a tasty and original appetizer for your Easter dinner? Try my baked kale chips! Only 5 ingredients and no mess to clean up. All you have to do is mix all the ingredients of the coating together and cook everything in the oven (or in a food dehydrator). Unlike the most popular kale chip recipes on the internet, you won’t need an overpriced air fryer for my kale chips – even though this recipe works in the air fryer as well!
2. Beet Hummus 🥄
A colorful and creamy dip, that will surely impress your guests! Beets are incredibly nutritious (more on the amazing benefits of beetroots here), and with this recipe, you will easily trick your kids to eat this “superfood” too. You can prep the hummus in advance, and then serve it with my gluten-free Flax Quinoa Crackers (check the recipe below).

Have you ever tried making your own crackers at home? With my recipe, you will prep some healthy, crunchy quinoa and flaxseed in less than 30 minutes. Great with my beet hummus (recipe above) or other creamy dips, such as Rick’s Black Bean Dip or my Oil-Free Curry Hummus!

Next on my Easter menu is this Roasted Vegetables Pasta. Again, a kid-friendly, vegan Easter recipe, is still very nourishing and wholesome. For this recipe, I opted for some chickpea pasta, higher in fiber and protein than regular white pasta!
Side Dishes 🍠& Salads 🥗 – Vegan Easter Recipes
Now that we have our appetizers and mains covered, let’s move to side dishes and salad. I personally love to combine a “heavier” dish with a light salad or side dish. Of course, this does not mean eating plain, boring boiled veggies. On the contrary, my salads are full of colors, flavors, and consistencies, for a true culinary experience!
11. Mediterranean Brussels Sprouts 🍃
One of my favorite side dish recipes! Easy and quick to make, but full of flavor. For a fully plant-based dish, swap the regular feta with a vegan one, or with some silken tofu.
12. Healthy Creamy Mashed Potatoes 🍠
What’s more festive than mashed potatoes?! One of my favorite childhood dishes, but way healthier -and creamier, not to too my own horn! For a plant-based version, swap the low-fat milk and yogurt with some soy or oat ones (remember they should be unsweetened).
13. Cold Broccoli Salad with Pear Vinaigrette 🍐
The creaminess of the pear vinaigrette perfectly balances the crunchiness of the raw veggies in this cold broccoli salad. A must for your Spring picnics and Easter brunch!

A fruit salad for your Easter breakfast? It’s a big YES for me! This one is covered with a refreshing lemon maple vinaigrette, that enhances the sweetness of the fruits in the salad. Here I used strawberries, blackberries, and watermelon, but you can also add/swap them with blueberries and Honeydew melon.

What’s best than ending your bottomless Easter dinner or brunch with a decadent slice of cake? Even better if it’s vegan, dairy-free, low in refined sugars, and made with simple, healthy ingredients! All the treats you will find here are easy and quick to make and can suit all dietary needs.

Last but certainly not least, are the drinks for our Easter feast! Here, I will show you options for both mocktails (non-alcoholic beverages) and traditional cocktails. Plus, an incredible and refreshing strawberry detox lemonade, my signature beverage!
22. Hibiscus Margarita Mocktail 🍸
A sweet and sour kid-friendly “cocktail”, sugar-free, caffeine-free, and simply delicious! For this recipe, I used some homemade hibiscus tea, rich in antioxidants and other beneficial compounds.
23. Watermelon Sangria 🍉
A twist to the traditional Spanish sangria, made with white wine, fresh watermelon pulp and juice, and a refreshing hard lime seltzer. For a non-alcoholic beverage, just swap the white wine with some alcohol-free wine or lemon soda + grape juice.
24. Strawberry Detox Lemonade 🍓
Rich in detoxifying compounds, this Strawberry Detox Lemonade is my signature drink! The perfect refreshing beverage for your Spring barbeques, or Easter brunch!
